Yes, but not with a conventional belt design.

Yes, 40m is possible because we had done it many times. Our company MODU System are one of the few companies which produce the conveyor chain called "crescent chain". That's a very elegant system ! I normally associate sushi conveyors with standard side-flexing slat conveyor belting (e.g. "tank track"), but that looks more like a true planar chain conveyor with upright posts supporting the platters ! Very nice !

Funnily enough, we've done a couple of these, but not for sushi restaurants. Our most recent one was a kind of 'storage magazine' to present bins to a plastics extrusion machine and - when each bin was full - index it down the 'racetrack' and present an empty one, hence allowing the extruder to run overnight without the need for bins to be emptied. We even made a little video of it .... chain conveyor.

Yours looks nicer, though. And tastier !
