That's a very elegant system ! I normally associate sushi conveyors with standard side-flexing slat conveyor belting (e.g. "tank track"), but that looks more like a true planar chain conveyor with upright posts supporting the platters ! Very nice !

Funnily enough, we've done a couple of these, but not for sushi restaurants. Our most recent one was a kind of 'storage magazine' to present bins to a plastics extrusion machine and - when each bin was full - index it down the 'racetrack' and present an empty one, hence allowing the extruder to run overnight without the need for bins to be emptied. We even made a little video of it .... chain conveyor.

Yours looks nicer, though. And tastier ! ■
